A month or so ago, I heard on the news Missouri BBQ came in third behind Tennessee and Texas. I didn’t hear all the particulars. I have lived in Texas and Tennessee and know, personally, the BBQ from those two states is absolutely wonderful. Missouri is in excellent company.
But then, you already knew that. And Missourians know, the BBQ here is mighty fine.

Our Wednesday lunch, on the deck, was BBQ Brisket from locally owned Sugarfire Smoke House.
The brisket sandwiches included a mac and cheese side. This was my plate. I didn’t have bread and saved half my lunch for supper.
While our Wednesday lunch was done to a turn by professionals, our usual BBQ meals are prepared by one of the very best BBQ chefs I ever met.
J is that chef. Whether preparing brisket, pork steaks, brats, or burgers, he is a master! We had pork steaks over the weekend; fork tender, melt in your mouth delicious. Next time he fires up the grill, I’ll get a few photos.
J is a pretty good chicken and fish fryer too. He prepares those meals outdoors, using a portable fryer.
