Actually not a big pizza pie, but delish anyway. Flatbread, sliced tomato, mozzarella cheese, parmesan cheese, fresh or dried basil, corn meal, olive oil.
Preheat oven to 400 degrees F. Heat stone, dust with cornmeal, place flatbread on stone and brush with olive oil, layer slices of mozzarella, sliced fresh tomato, sprinkle with dried basil or clipped fresh basil, top with grated parmesan. Top tomato basil layer with slices of mozzarella and grated parmesan. Pop into oven about 15 minutes.
I didn’t have fresh basil but the dried worked well. It was very fragrant.
Served with a chilled glass of Riesling.
Tastes like a Caprese Salad. Just a little something for the weekend.
