Friday Night Seafood Boil
J is an expert fryer of Catfish and Crappie. We’ve only cooked Lobster once in all these years. So it was no surprise he had a dubious look upon his face, when I suggested we try a Low Country Seafood Boil.
The plan was to do this outdoors and have supper on the patio. That idea was rained out. We did the cooking in the kitchen and had supper on the porch.
Served with Sam Adams Boston Lager, it was delicious. We shared the platter, set in the center of the back porch table.
Not too bad for a couple of Midwesterners, living just around the corner from the Mississippi River, where fried Catfish is the norm.
I used a couple of different recipes found online. New Potatoes, Onion, Corn on the Cob, Kielbasa(3 inch pieces), Shrimp (peel on), and Crab Legs. Ours was abbreviated since it was for two. We were still unable to “clean the platter”.
Large pot of boiling water with Old Bay seasoning added. Potatoes and sausage for 20 minutes, then corn added for 10 minutes, seafood added at the end of that ten minutes, continue cooking no longer than three minutes.
Drain, turn out on paper, serve with the usual sides and warm bread.
This was such fun putting together. I know it’s second nature to some of you, but this was a whole new experience for us. I hope we can do this with our family soon. They might get to participate in the prep and G’pa and I will just sit, have a cool drink, and observe.
