We have lost track of the last time we left the house. We aren’t quite at Stephen King stage of cabin fever, but we have had this little lapse of memory.
Even Molly seems to have lost interest in rolling around in the snow, even though snow is still on the ground. The temps have started to return to normal. It is raining. Perhaps January thaw has arrived.
We have a birthday to celebrate over the weekend. We planned a new project during our hibernation. This project requires a trip into town and the birthday celebration means a trip south. We will be breaking away from all this coziness for a few hours Saturday and Sunday.
We are surprised to find we have not gained a single ounce over Christmas or Polar Vortex, even though we enjoyed a variety of comfort foods and took lots of naps.
Speaking of comfort foods…I made a batch of pimento cheese this morning. I bought a box of Velveeta not long before Christmas, with the intent of making the Velveeta/Rotel dip. I didn’t get around to throwing the concoction together. This morning while I was digging around in pantry and refrigerator, I found the Velveeta and decided pimento cheese would be good on our breakfast biscuits.
I mixed grated Velveeta with Duke’s Mayo, chopped pimentos, and bread and butter pickle relish. Have you tried the Mt Olive B&B relish? It’s absolutely wonderful! The pickles are a larger dice than other relishes. Just right for salads.
Have you heard about the Velveeta shortage? What is that about! This was the first Velveeta I’ve purchased in years.
