IT’S SOUP!
VEGETABLE SOUP
Most of us make soup in the same way. Go to the pantry and freezer and see what we have. Grab a couple of ingredients, throw them in a pot, add the usual soup herbs and spices.
Voila! Soup!
This time I used a large bag of frozen stir fry veggies, egg noodles, vegetable stock and a can of tomatoes. I tossed all the ingredients, except noodles, in a large pot, added soup spices and herbs. Simmered about 30 minutes.
I cooked a few egg noodles in a separate pot.
Served soup over noodles.
Garnished with shaved cheese. No particular cheese, just whatever was in the fridge.
